Daily
Dining floor, amenities and front of house, before you open or after an early close. The areas customers judge you on before they taste anything.
Cleaning and sanitising are two different things. The Food Standards Code asks for food contact surfaces to be both clean and sanitary, and sanitising only works after cleaning.
We do both and the record shows it. Kitchen, front of house, amenities and outdoor dining, cleaned before you open or after you close, between 6am and 10pm.
Scheduled cleaning of the cookline, prep areas and cool rooms. Dining floor, amenities and outdoor dining too, written as a scope with frequencies against each area.
Under the Food Standards Code, food contact surfaces have to be clean and sanitised. Those are separate steps, and sanitising does little without the clean first.
Outdoor dining goes in the scope. Footpath tables and parklets are what passers-by see first, so we write them in rather than stopping at the front door.
Daily close-down stays with your kitchen team. We handle the scheduled deep work around it. For attached office space see office cleaning in Melbourne.
Built around your trading pattern, not a standard week.
Dining floor, amenities and front of house, before you open or after an early close. The areas customers judge you on before they taste anything.
Behind and under the cookline, commercial kitchen degreasing, cool room shelving and floor drains. Usually on your quietest day.
Dining room floor scrubbing, tiled walls, ceiling vents and light diffusers. Scheduled quarterly rather than left until something looks bad.
Event weeks change the load rather than the scope. The tennis in January and spring racing lift covers, and the schedule lifts with them.
Our crews work from 6am to 10pm, seven days. The clean goes into whichever end of your day is free.

Cafes and lunch venues that shut by mid-afternoon get an evening clean the same day, finished by 10pm.
Step 02
Venues that trade late get a crew from 6am the next morning, finished before prep starts.
Step 03
Surfaces cleaned first so the sanitiser can work, with contact time respected on food contact areas.
Step 04
A dated record of each visit, useful if a council inspector arrives that week.
Four zones, each on its own frequency in the written scope.
Sent with the quote rather than after you sign.
Some food businesses handling unpackaged ready-to-eat food have to be able to show their cleaning and sanitising practices. A dated record with photographs is the simplest way to have that ready.
Melbourne eats outside a lot, and many venues trade late. Both change the job.
Food premises registration and inspection sit with your local council under the Victorian Food Act. The cleaning record is part of what you can show them.
Three things worth asking any contractor quoting hospitality.
Cleaning removes dirt and grease. Sanitising reduces microorganisms to a safe level, and it cannot reach anything left underneath.
Ask whether your scope lists both steps separately, so you know which one you are paying for.
Footpath tables and parklets are the area every passer-by judges you on. If the scope stops at the front door, nobody is cleaning them.
The clean has to land before prep or after close without running into service. We work from 6am to 10pm and plan to your actual opening and closing times.
Your registration and your reputation both sit on this. Here is what backs it.
Four steps, usually inside a week. No obligation at any point.
Cookline, cool rooms and front of house, plus the outdoor area and your trading hours.
Area by area with frequencies, with cleaning and sanitising listed as separate steps.
Keys, alarm and your close procedure, plus chemical storage and your reporting contact.
Logged after each visit with photos, and the schedule reviewed every six months.
Venues are quoted after a walkthrough rather than from a rate card. Cover count, equipment and your trading hours drive the work far more than square metres do.

Restaurants, cafes, bars and takeaway venues across metropolitan Melbourne. Running more than one venue? Request a walkthrough and we will scope them together.
Victorian and Edwardian terraces, weatherboards, and converted warehouses where winter condensation and older timber floors shape the work.
High-rise apartment towers alongside heritage family homes where building access windows and owners corporation rules decide the schedule.
Family homes on large blocks where ducted heating registers, large floor plans, and outdoor paving are regularly booked together.
It is quoted after a walkthrough rather than from a rate card. Cover count, the equipment on your cookline and your trading hours drive the work far more than square metres do. The quote states the cleaner hours behind it so you can compare tenders properly.
Cleaning removes dirt, grease and food waste. Sanitising reduces microorganisms on the surface to a safe level, using heat or chemicals. Cleaning has to come first or the sanitiser reaches nothing.
It can be, and we recommend it. Tell us about your outdoor tables and parklets at the walkthrough and they go into the written scope.
From 6am the next morning, finished before prep starts. Our crews work from 6am to 10pm, so a venue that closes after 10pm gets a morning clean rather than a late-night one.
A dated record of each visit with photographs, and a written schedule showing cleaning and sanitising as separate steps. Having the record already there makes it easy to show what was done and when.
Yes, both are scheduled rather than requested. Behind and under the cookline, commercial fryer cleaning and splashback degreasing usually run weekly on your quietest day. Anything heavier goes into the periodic schedule.
Yes. Canopy and duct cleaning is quoted separately after we have looked at the canopy, filters and duct run. It can sit in the periodic schedule alongside the floor scrubs.
Yes. We carry $10 million public liability insurance, and the certificate can go with the quote.
Yes, seven days from 6am to 10pm. Event weeks lift covers on the same weeks each year and the schedule lifts with them. Peak weeks book out early, so send us your calendar in advance.
