What do we take apart in an oven clean?
The oven door, first. The glass separates so we can get at the film between the panes, which is where most of the brown comes from.
Racks, trays and shelf runners come out and soak. So does the rangehood filter, which is a different job to wiping the hood.
Nothing gets left on to burn off. Strong caustic products can pit an enamel oven floor, so we work with dwell time and heat rather than strength.

What does oven cleaning cover?
Four parts. The last one is the one most often skipped.
The filter is a metal mesh that has to soak to release grease. Running it under a tap moves a little off the surface and leaves the rest in the mesh.

Grease sits inside the layers of the mesh and only comes out by soaking. That is why a hood can look clean and still smell, and why ours goes into the soak tank with the oven racks.
